Jamie Oliver's Roasted Milk Chicken

Ingredients:

1 whole free-range chicken

1/4 cup unsalted butter

1/4 cup olive oil

1 cinnamon stick

1 head of garlic (yes, the whole head)

2 1/2 cups whole milk

1 bunch fresh sage

2 lemons (zest only)


Step 1: Heat oven to 375 degrees. Rub chicken with olive oil, salt, and pepper, inside and out. In a dutch oven, add olive oil and brown the chicken evenly on all sides. Remove chicken and place on plate.


Step 2: Add cinnamon stick and whole garlic gloves to dutch oven and sizzle. Return chicken to pot and cover with milk. Add sage leaves and large strips of lemon zest.


Step 3: Place in oven and bake for 1-1.5 hours, basting occasionally. Check sauce levels and cover if liquid is getting too low.


Tips - this sauce can be reserved and used to poach greens or potatoes to give them a wonderful rich and citrusy flavor!
