This bird is a SASSO chicken. SASSO is not actually a breed of chicken, but an acronym for the French company that developed them. SASSO stands for “Sélection Avicole de la Sarthe et du Sud-Ouest” and means that the breed meets the standards first laid out by Serge Perrault in the 1950s. These birds are characterized by a strong body, short wings, and wide chest. They are a hearty breed that is resistant to most diseases, parasites, and weather conditions. They have very thin, yellow skin that crisps easily. The meat is firm with succulent flavor that has been compared to duck. Since SASSO’s are a slower growing bird, their meat tends to have a richer flavor, firmer texture, and rich, yellow fat.
This SASSO chicken was raised on pasture with a diet primarily consisting of peas, oats, flax, and linseed, in addition to their forage. Their diet, free of soy and corn, promotes the development of Omega 3 fatty acids as opposed to the Omega 6s found in chicken fed rations of corn and soy. Omega 3s are significantly underrepresented in Americans’ diets and have been found to benefit the heart, improve circulation, and reduce inflammation.
